Peruvian restaurant Coya has unveiled the ‘world’s first’ bottled passion fruit pisco infusion in collaboration with Pisco 1615.
The blend uses passion fruit pulp, and has been designed to ‘guarantee freshness and full flavour in every drop’. The bottling is said to offer guests a new and unique take on the South American spirit. In 2022, Coya’s corporate bar manager, Sany Bacsi, and each of the bar managers from the eight global Coya venues travelled to Peru to work alongside the Pisco 1615 team. Pisco 1615 has worked as the brand’s distillery partner since it launched in 2012. The trip involved participating in the yearly harvest at the vineyard located 243 kilometres south of Lima, in the province of Pisco. The vineyard was formerly part of the historic Hacienda of Santa Cruz de Lanchas, which dates back to the 16th century. The team took part in numerous tasting sessions with Pisco 1615’s master distiller to ensure that they created a perfectly balanced macerado. “The bar team and I wanted to bring a whole new level of attention to the entire pisco category, the culture of Peru, and inspire every pisco brand around the world,” said Basci. “With the help of 1615, combining our years of experience, honest love for the category and the understanding of our guest needs, we created something truly unique; something that no other pisco brand has ever completed. “Bartenders around the world will now have an innovative product that gives them ways to re-think their classics and create quality, passion fruit cocktails without purees or sugary liqueurs. “Additionally, with Coya 1615 Pisco available to purchase, everybody will be able to make a Pisco Sour or a Chilcano at home and bring the Coya Pisco Bar experience to their dining rooms.” Coya says it has always focused on and utilised unique, handcrafted pisco infusions in its cocktails. While each Coya location has its own personalised cocktail menu and homemade infusions, passion fruit remains the most popular flavour in every global outlet. It was this discovery, and Peru’s status as the world’s leading exporter of passion fruit, which prompted the brand to collaborate with Pisco 1615 to create the bottled passion fruit-flavoured macerado. Raul Otero, general manager of Pisco 1615, commented: “Working together with Coya over the past 10 years has been an exciting learning journey, and we all feel like we have grown along with the brand. “The innovative infused macerado that we developed together perfectly represents the magic, diversity, and surprises behind Coya and 1615. It flawlessly reflects the precious synergy that we share.” From January 2023, the passion fruit-infused pisco will be available for guests to try at all Coya venues in Dubai, Abu Dhabi, Doha, Mayfair and The City of London, Monaco, Paris, and Mykonos. The new blend will also be available to purchase from select locations where Pisco 1615 currently retails across the globe in due course. In 2022, the Local Spirits Brand Champion title went to pisco brand Mistral for yet another year.
